So the night was woooonderful. We got all 'dolled up' and took a leisurely drive up to St. Augustine in the rain. Made a stop at Matanzas Beach in Marineland which we got all to ourselves because it had been deserted due to the rain. Then we continued to 'The Conch House' for a wonderful 3-course meal together. The restaurant overlooks a marina with the St. Augustine lighthouse to the right. We were hoping for private seating in one of the tiki huts but all the outside dining was pretty much waterlogged at the time of our arrival. We tried 'cracked conch' which came from Belize as an appetizer. It came with a tasteful key-lime honey mustard dipping sauce. The conch had the consistency of calamari; very chewy but yummy. Always fun to try new things. Then we had two side salads with homemade rolls that had some kind of colorful pepper specks in them, just a hint tho. And our entree was this Caribbean Chicken Pasta which we shared. It had just the right amount of 'kick' to it with the chicken marinated in a caribbean jerk spice all blended with shallots, sun-dried tomatoes, sherry and a cream sauce. And we even got a mini bottle of champagne to really commemorate our special night. Our whole 'island-dining' experience was very delightful. Afterwards, we walked down the dock and explored the marina a bit just chatting and thoroughly enjoying each other's presence.
